Last week, I invited my Grandma, my mother, and my sister for an afternoon tea party.
If ever you have a tea party... here is a lovely cake to serve.
It sits so pretty, garnished in powdered sugar... with apple-y goodness inside.
Recipe adapted from The Gourmet Cookbook
3 c. flour
1 tsp baking soda
1/2 tsp salt
1 1/2 c. veg oil
3 large eggs
1 1/2 cups vegetable oil
3 large eggs
1 1/2 c. sugar
1/2 c. packed light brown sugar
1 T. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
3 apples, cut into 1/4 inch dice
Sift dry ingredients.
Whisk oil, eggs, sugars, vanilla and spices in a large bowl until just combined.
Fold mixtures together, just until combined...then add apples.
Spoon into prepared bundt pan.
Bake at 350 degree oven for about 1 1/4 hour,
or until tester comes out clean.
Cool in pan for 10 minutes,
then turn out onto a rack to cool completely.
Before serving, sprinkle with sifted powdered sugar.
