Recipe of the Week

The best chocolate cake: my grandma's recipe. Quick, easy, basic. Scrumptious while it's still warm ~a la mode~...but still really, really good the next day, too.

Quick Cocoa Cake
9T cocoa
3 cups flour
2 1/4 cups sugar
1 1/2 tsp baking soda
1/2 tsp salt
3 eggs
1 1/2 cups oil
1 1/2 cups water

Sift together dry ingredients. Mix with wet ingredients.
Sprinkle generously with dark chocolate chips/nuts just before baking.
(Sometimes, coconut is delicious on top, too.)
Bake in a buttered 9x13 pan at 350 for 30-40 min.
Cupcakes for 20 min.

*recipe can be halved and baked in a 9x9 pan... but my days for halving recipes are so long gone.

On my to-do list today: Bake this cake with my boys since it's about -20 and there will be no playing outside for them! Yes, -20 in March can be completely annoying!!! Warm chocolate cake....sounds delightful today!
