Christmas Treats with Josiah

Josiah chose to bake spritz cookies with me.  Of all my children, he is the one who would be able to master the cookie press!  He did a great job, and had fun doing it.


He laughed at some of the camels that turned out "fat" and the trees that came out a little too skinny.  But most of all he liked sampling the ones that broke as they came off the pan! (Our house rule~ if cookies break, the cook must remove the evidence!)


Spritz Cookies

1 cup butter, softened
½ cup sugar
2 ¼ cups all purpose flour
½ teaspoon salt
1 egg
1 teaspoon almond extract or vanilla
Heat oven to 400 degrees. Mix butter and sugar. Mix in remaining ingredients. Place dough in cookie press; form desired shapes on ungreased cookie sheet. Bake until set but not brown, 6 to 9 minutes. Immediately remove from cookie sheet. If desired, sprinkle with sugar.  Makes about 5 dozen cookies.
